Maine Lobster - A Delicacy You'll Enjoy

Maine is known for clean, sustainable fisheries.  Unlike other lobster fisheries, Maine has minimum and maximum size restrictions to protect both juveniles and large, healthy breeding stock.  Commercial lobster fishery was developed in Maine in the 1840's and since that time these lobsters have become scarcer and thus, more valuable.  Harvesters carry a gauge that measures the lobster and specimens measuring less than 3-1/4 inches or more than 5 inches go back in the water.  Also, lobster traps must have escape hatches for small lobsters and a biodegradable hatch in case the trap is lost.
