Light N’ Easy Fresh Crab Salad



Though this is particularly delicious in the warm weather seasons, you can always find a good time for a light and easy dish. Use for lunchtime, dinnertime - or party time! We developed this recipe to work with our Fresh Catch Jonah Crab Meat (see page 10), but it would work with any other kind just fine. Assembles in minutes and healthy too!

1 lb. Fresh Jonah crab meat
2 Tbsp. Light Zesty Italian Dressing
1 Tbsp. Old Bay Seasoning (usually can be found at the fresh fish counter)
1 cup Light Hellmann’s Mayo
1/2 cup diced red pepper
1/2 cup diced celery
1 large green onion, chopped
1/2 tsp. celery seed
1/4 tsp. dry mustard
1/4 tsp. garlic powder

Carefully comb through crabmeat for any extra shells. Making sure not to break up crab, marinate crab pieces with Italian dressing for about hour. Meanwhile, thoroughly mix all other ingredients in a medium bowl. Add crabmeat mixture to mayonnaise mixture and mix with spatula, again not to break up pieces. Chill in the refrigerator for 1-2 hours, or serve immediately on a bed of fresh mixed greens or wrapped in a tortilla with tomato and lettuce.

Makes approximately 4 servings. Also great as a party dip with your favorite crackers or pita crisps!
